assalamu'alaikum, now i'd like to present indonesian food that is "RENDANG" , if you don't know, Rendang is a spicy flavored meat dish that uses a mixture of various herbs and spices. This cuisine is produced from a heated cooking process repeatedly with coconut milk. The cooking process takes hours (usually about four hours) to dry and solid black. At room temperature, rendang can last for weeks. Rendang is cooked in a shorter time and the coconut milk has not dried up called kalio, a light brown golden color.

Rendang can be found in Padang Restaurant around the world. This dish is popular in Indonesia and other Southeast Asian countries, such as Malaysia, Singapore, Brunei, Philippines, and Thailand. In the area of ​​origin, Minangkabau, rendang is served at various traditional ceremonies and special occasions. Although rendang is a traditional Minangkabau cuisine, each region in Minangkabau has cooking techniques as well as the choice and use of different spices.

the ingredients of rendang :

  • 300 grams of beef
  • 3 boiled eggs
  • 1000 ml coconut milk
  • 2 stalks of lemongrass
  • 2 Salam Leaf
  • 6 Lime Leaves (daun jeruk)
  • 1 turmeric leaves
  • 1 Star Anise (pekak)
  • salt to taste
  • mushroom broth
  • and a little sugar

the spices of RENDANG:

  • 10 pieces of red chili
  • 2 pieces of red big chili
  • 10 pieces Shallots
  • 10 pieces Garlic
  • 3 cm Ginger
  • 5 cm Galangal
  • 1 teaspoon Coriander
  • 1/2 teaspoon Cummin
  • 1/4 teaspoon Nutmeg

how to make RENDANG :

  • first Saute the finer spices until completely cooked and remove the oil 
  • then add lemongrass, bay leaf, lime leaves, turmeric leaves, Star Anise then cook again until the fragrant
  • add pieces of meat and  stir until it changes color add coconut milk and eggs, cook again with medium / small fire while stirring.
  • give a taste with salt, mushroom broth and a little sugar then cook again until coconut milk shrinks and the meat becomes tender
  • if you want the color become brown cook again with a small fire for 4-5 hours
